Today was day one of our Vegan 7 Day Challenge! Everything we ate was satisfying and delicious. I wasn’t really worried about being hungry or not satisfied, I’m a girl who loves my veggies. I was worries that my husband, Angelo was going to be left feeling like he had to eat 10 servings in order to feel full. But that didn’t happen either.
Breakfast:we had steel-cut oats that I had made the night before. I love making a big batch of oats and having them throughout the week. To reheat pop them in the microwave for about 45 seconds, add a bit of almond milk(unsweetened), stevia, and whatever fruit I happen to have on hand. Today it happened to be pineapple and dried unsweetened cherries. I had it along a glass of Mate tea with almond milk. mmmm mmm good!!!
Throughout the day at work I munched on walnuts. Nuts are a great snack, just watch your portion size on them, and try to buy them without added salt! Lunch was a quinoa salad with olive oil and balsamic vinegar as dressing, I also had some hydrating coconut water, and some more walnuts.
I got home from work around 5:00 and made an alkalizing life force energy green juice! I LOVE juicing so many people look to coffee for energy in the afternoon(and morning, and night!) juicing wakes you up and gives your body energy and helps you get many needed vitamins and minerals.
For dinner we tried a new recipe. We had Sweet Potato and “Un-fried” bean tacos from CHowDevine. I recently discovered this website this was the first recipe we tried, and it was a hit. I was worried Angelo wouldn’t be a fan, he is not a big sweet potato lover but he ate these right up, and even had some the next day for lunch. We served the tacos with our Base Guacamole and a corn salad whose recipe I will be sharing with you shortly!
After day one I asked Angelo what his thoughts were of our Vegan Challenge he said “I don’t have to eat meat, I just don’t like it when things taste weird”. So far so good. None of our food has tasted “weird” to him, but stay tuned because I’m sure I’ll find some type food to freak him out. 🙂
